Now I get acused of trying to overcompensate

I picked up a used muffpot and was told it had more than one feature and was adjustable.
So the first time I use it its not hot enough so I start messing with the "*" dial... The muffpot poped out of the clamp and hit me upside the head!
It didn't come with any instructions... What did I do wrong?
