I am about to put up new siding on an old house built in 1917 and it’s as crooked as a used car salesman.. Start level at the bottom and work up and make leave the crooked portion at the top??
 
I'm not a sider but isn't there a siding that would hang vertical or some other funky kind that can be hung slanted ?

Maybe another alternative as it would hide how crooked the house is that way
 
Drywaller turned sider here, how crooked are we talking about? I assume since its so old, that everything is pretty out of level by now. If everything including the roof and eaves are out of level, there is not much you can do. Leveling the siding from the bottom up would be the best way, but you are really going to to see it around the windows if they are out of level as well. I assume you are talking about vinyl or some other horizontal siding. Maybe T1-11 or anything vertical would be the choice. If you rebuilt the gables and eaves and did alot of firring you could make it at least appear pretty straight to the naked eye. We have sided some pretty old houses as well, and it takes alot of work to get them to look real good.
 
Do lots of siding with my pop's business, and mostly on houses that aren't new construction.

If the top is level, you can use a "false" bottom piece to straighten the wall. You can also shim very small amounts on each siding row, eventually work out a huge amount by the time you hit the top and never notice looking at it. Be careful though how you do it, if you get too far off on a single wall, makes it really hard to come out even on the other walls and have your siding lines match up. A couple measurements and could have a lot more info for ya. Depending on the amount you need to make up and the size of the wall, you might be able to do something with it.
 
Just cheap vinyl is going on, It an old rental property I am renovating. I do interior's but this will be my first ext. I house wraped it then put on 1.5 " of (cel-fort) ridged insulation and now going to side it.
