How big of an enclosed trailer can I haul?

Yeah thats another thing to consider ... an enclosed trailer picks up WAY WAY WAY WAY more wind than your open one does ;)

Most 4 place trlrs are 3.5 to 4k empty plus 4 sleds at 600 lbs ea is 2400 lbs plus gear for 4 add another 150 to 300lbs and your right in there. Load tow ratings for most 1/2's are in the 5-7k range and thats in ideal conditions.
As has been stated throughout this thread its not a recommended scinareo but doable in flat dry conditions as in MN.

Its pure suicide in mountainous icy conditions as in most western states. I am talking conditions so slick you have to hold on to the truck when getting out which is not uncommon throughout the winter months.
A trlr that weighs as much as the truck will push it in the corners and will walk it around at highway speeds. Most western roadways are narrow and uneven which compounds the walk around problem. Seat pinching white knuckle. Stopping is another issue all by itself.

Then when you go off the pavement the truck won't have enough traction to pull hills with 4x4 and studs. The trlr will pull it out of control if you try to back down which is not good on a 20' wide road and several hundred feet of drop off so you offload everything. Over the years I have been in all of these situations.

Also my experience with truck manufactures tow ratings is there good for about 75%.

You are kidding right???? Your 1 ton dually probably has a GCWR of around 23K...your truck can't weigh more than 8K from the factory...

So with your calculations, I need a Kodiak Topkick to pull my 4 place enclosed safely.....no...:D

Empty its around 7.5k, with the 2 sleds on it its 600x2 plus 250 for the rack or about 9k.
The trlr is a 12' floe enclosed which is about 1200 plus 600x2 for the sleds and 200 for gear or a little under 3k total.
GVW is about 12k thats about 75/25 and its a dream on icy roads.
But at a 60/40 ratio with 2 sleds on the truck it equates to about 6k trlr weight.
Empty truck at 60/40 is about 5k trlr weight.

Its really not a power thing as much as it is a weight thing, which will determine which vehicle is in control on ice.

Power wise its a BB Chevy which is just the icing on the cake.
