Got my whitetail cut up the other night and I'm trying to find some good recipes/marinades to try. What are some that you guys use/swear by?

if it's old and tough or just tough LEMON JUICE.

that stuff will soften the meat right up and add a nice taste. I've used a teryaki and lemon juice, brown sugar mix and had good results on deer, goose and duck.

Currently trying to nail down a good whiskey sour mix. Last time I was to heavy on the lemon juice vs the whiskey and each bite of meat was like biting into a lemon.

Orange Juice also gives a nice taste.
 
A marinade, told to me by a "home ec" teacher many years ago, was simple.
To mellow-out a strong "gamey" taste, smear on a thin coating of plain old yellow mustard, then place in a pan with some ordinary red wine. Turn occasionally .

I never believed her 'til I tried it. When cooked, you don't taste the mustard or the wine.
 
Marinade it in Zesty Italian Dressing for a few hours or overnight, whatever you have time for. The acid in the dressing tenderizes the meat. Then throw it on the grill until they're medium and no more. Otherwise it will get dry real fast.
