You are correct Gus!
If your target AFR is set at a value (for example 13.2:1 in the midrange), and you hold the throttle at that midrange position for a long period of time, thus leaning out the burn, the AutoTune will begin to add fuel to keep the Air Fuel ratio within your target value of 13.2:1. It will constantly make this change as you ride. On your next run through that same midrange portion of the fuel map where it was running lean and adding fuel, if you accelerate through the range quickly and the AFR does not lean out, the AutoTune will not need to add as much fuel, and thus the previous trims will not be applied.
Power Commanders do have a maximum trim value to keep too large of a value of fuel from being added or subtracted from the base fuel map - which functions as a partial fail safe to not to not trim in too Large of excess.
