Is it possible to raise the tunnel to give it more clearance by just adding an extended bracket to the track rollers towards the back of the tunnel or is there more to it than that?

Yep check out http://www.smittysspeedworks.com/

He cruises the forums and is a pretty good guy, he makes some sweet lookin dropbrackets that will gain you a couple inches.

If you go a full two inches you need to lower the front skid mounting hole to correct the new geometry.

Many have done it and liked it, but some don't find it to be a worthwhile mod...

If you adjust your limiter, and or drill lower mounting holes then no you don't change your ski pressure, you do increase the attack angle of you track but only a couple degrees.

I used scales to set mine up and was able maintain my ski pressure the same as without the 2" lift. In the end I chose to remove mine, because I found no positive or negitive affects as a result of having them.
