Knife Sharpener

DMT!!

I have the Norton ... but rarely use it anymore...

I'm hooked on the DMT Dia-Sharp Diamond stones 11.5"... set of four cost about $250 on Ebay or other online distributors... I use these on all but the final stages of sharpening my best Japanese chisels... I still use the super fine Japanese wetstones for that stage.

I Keep the edge refined on my kitchen knives with the ultra fine diamond stone as needed.

IMO.. no comparison in how well they work... When I travel, I keep these in my truck and sharpen kitchen knives for friends... amazing how many expensive sets of Henckels/Wusthof/Masahiro/Mac knives are in peeps kitchens and they are dull enough to ride bare azzed to Chicago on.... 15 miniutes of work and I'm a hero for the day!

Aren't those overkill for only using on kitchen knives? I have heard the woodworkers require / need a much sharper edge than what cooks need.

Obviously the sharper the better, but I would think the point of diminishing returns is closer for kitchen knives than it is for chisels and woodworking tools.

Would you agree?
 
Buy the fine DMT Diasharp 11.5" and call it good... You can ebay them less than $80.00

You're right... the full set would be overkill for most.

That sukka will sharpen everything you own... no oil needed.
