Underarmor or tshirt depending on weather. Klim everest or infero fleece depending on weather and jacket and your set. Layering is nice you can always add or take layers off
 
What are most people layering with. i just bought the Valdez parka. My old jacket had a fleece liner. I was thinking under armor,then fleece vest or jacket,
then parka.

patagonia capilene...for base... then wool sweater for mid...

Stay away from cotton! It might be fine for an afternoon are a day ride, but with the exertion from riding, the cotton will get wet, and if you get cold, you are hosed!

Remember, cotton kills!
 
I love my pullover I were my klim base layer and a tek vest under it and I've never been cold.

Layering

As stated below, Anything But Cotton.

I would stick with the Klim under layering system. They have both a base layer and mid layer. The advantage of this is that you can layer depending upon the temperature you expect to ride in. It also allows you to shed layers as it get warmer.

I think the cotton concept is really important on your feet. Even though Gore-Tex boots will breath it is much harder to get rid of moisture in your boots than say your upper body. I found a huge difference in my feet when I quite wearing cotton in my boots a few years ago.
