Took a little walk in the mountains today, ran into some giant puffballs, when I cut them open they were white as high mountain snow in January. Yum, yum, they were good! Here are a couple of pics of the smaller one of the two we picked. Probably enough for all summer.

Ya, they are a mushroom, I have not found any edible ones this big before, the are always turning bad, we hit these perfect. I guess the old magic dragon is done breeding now. ( Only one I could think of)

As long as they are all white when cut open they are good. They don't have gills like a mushroom they are solid. Next time take it home and try to get someone to correctly identify it for you (county ag. agent?) Peel the outside skin off. Your good to go!!

How do you guys cook them? I usually fry them in butter with pepper/salt garlic and dill, then add flour and milk to make a gravy which we dip biscuits or toast in.

Sounds really tasty, I will have to try your recipe. Tonight I just sauted them in a little butter and added to some pasta with shrimp, a few green vegies thrown in, olive oil, lemon(no garlic, momma has to work tomorrow!!) and of course more butter!!

when they are not white does it mean they are rotten or are there toxins building up?

I think it means they are basically "going to seed" or releasing their spores. Thats why I always step on the "bad ones" to release the yellow cloud of spores, more for next year!!
