Gamemeat - Best Table Fare? - BUFFALO!

I have always preferred wild game as my main choice of meat with my ranking as most delicious;
#1 = Bighorn Sheep
#1 = (Tie) Mountain Goat
#2 = Whitetail
#3 = Moose
#4 = Elk
#5 = Pronghorn Antelope


HOWEVER, there is a new champ in my book - BUFFALO.

This past weekend (Sat.) we kilt and butchered a 2 year old Buff Heifer, we had Tenderloin steaks Sunday night, and made our own "Buffburger" and a rack of Ribs tongiht .............. OMFG!!! :eek:, I have never tasted anything as incredible as this Buff. I have eaten alot of Buffalo from stores, and/or resturants, it is NOTHING like fresh Buff that is processed and taken care of. All I can say is WOW! We are in HEAVEN, a little bourbon to wash it down and "What more could you ask for!" :D

We made up a rack of jerky, and will taste it soon as it dries, my own special recipe for breakfast sausage this weekend.

2 year old heifer, (See pic - I am 6'3") we got about 400 pounds of processed meat weighed on a scale after packaging.

Wait until you grill yourself up a big ol' buff burger, nothing like it!


We actually grilled one up tonight, you are soooo right!

Do you add any fat? we did NOT, I have my own meat grinder, and ground up scraps we trimmed off the backstraps & hump and it is superb, I could have made the whole buff into burger and been happy as could be, it is unlike anything I have tasted.

Have a buddy who has a buffalo ranch, hooks us up with fresh buff anytime we need it. Once you start eating buffalo it is hard to go back to beef. Steaks are amazing on the grill, with it being lean they do dry out faster, so make sure ya have a hot grill to start with and seal the steaks up good.

Where does wolf rank in that list? :D
 
how much does a Buf cost ya?

Tried burger once, damn things kept falling apart on me.

Can't believe you don't have Blue Bills on that list....now htat's yummy stuff.
 
Buffalo and Moose are pretty good but you guys can have my share of the sheep and goats.

Up here, you could go to the auction mart and buy one for less than $100 at one time. Bison meat is very tough to beat in my books....
 
I got a draw for a wild buffalo a few years back in the pink mountain area of northern BC. Shot a nice three year old cow. Bar none the best wild meat I have ever eaten.
 
Slimmer, I grew up on that stuff.

We raised them until I was almost in middle school.

VERY smart animals. VERY unpredictable.

VERY good meat.

SERIOUSLY...BOIL the tongue. We used to do that all the time. Makes a REALLY nice sandwhich spread if you don't like the steaks. IT's best run through the food processor and made into sammich spread. Goes GREAT with Ketchum and Miracle Whip.

Ummmmm I'm hungry just thinking about it.

The breakfast at Perkins with Sunridge and Wad this AM won't hold out for long. LOL
 
Kind of saddens me a little that antelope was so low on the list. Honestly, and I think some of you can back me up, antelope, if taken care of properly is wonderful. If you can make a good quick kill without running it to death, get it skinned and cooled off as quickly as possible, and especially if you can get one that hasnt lived in the sagebrush it's whole life, it will be the best meat you ever ate. You can cut it with a fork, has a great flavor, oh man if I hadnt just finished eating some breakfast sausage I would be salivating.

My brother got a buffalo at Gardiner a couple of years ago, and yes, it is great. We still have lots of buff in the freezer, those things are huge!

Must be getting close to grilling season this kind of talk excites me...
 
Yep, Antelope is #1 in my experience. How ever I've never hand big horn or Mountain Goat!
