91 oct vs 89 non ox, what is the differences?

depends on what altitude we are talking about, The Cat 800 HO requires 91 but that requirment only applies when operating near sea level, at 6000+ feet I run 87 in my 800HO because that is all I can get, no issues at all but you didnt post what sled this is about, if its some highly modified sled then you would have to ask the tuner that built it

i get gas 200 gallons at a drop and can get 89 non ox or 91 ox. it is around less than a month, so the 91 wont go bad, but wondering what is best.
 
Basically the higher the octane rating the more complicated the molecular structure, which makes it more resistant to pre-ignition from heat and compression.

Oygenated fuel is ethanol based fuel, normally like E10, which includes a chemical compound containing oxygen. Ethanol is less energy dense but does have a high octane rating (in the 100's if I recall correctly).

Running at low elevation you would want to run the recommend 91 octane fuel to prevent detonation.

Octane is octane... if your motor requires 91 octane it won't like 89.

Your asking 2 questions in one. The oxy fuel has other things that cause issues you need to be aware of but if the octane ratings are right then it doesn't matter (for octane) if its oxy or non-oxy.
