The loose bolt you see in the picture, I got it off fine on that side, but the direct opposite side just spins and wont thread out. Am I doing something wrong here or is their a trick to this?

I use an air impact wrench and that usually works with these kinds of applications.

When I find that happening, I tighten other bolt back on and then start over again

Race, thx that worked. Tighten one, loosen the other, tighten both, loosen both at same time, tighten one more than the other, etc etc lol.

The best way to remove these is to take off one bolt and thread a nut on that bolt and reinsert the bolt. Tighten the nut on the bolt. Then you can remove the other side. Now you can use 2 wrenches on the original bolt and nut. This makes very short work of replacing these bolts on these shafts.

So their is a method to the madness:face-icon-small-hap I'll remember that for next time!
