RE-Doing the inside of my enclosed

I have just bought a 2009 Continental Cargo 26ft and I started pulling the insides apart and it hasent come apart exactly like i would like, a couple panels have been damages Doh!
So i am look at options on what to do on the inside and where i can get the material. What have you done, when you insulated?
