Jerky...anyone?

Looking for anyone that may have a good jerky recipe, (venison). I have tried alot of jerky but just cant seem to find the one. There is a local butcher that makes good, great jerky, and I would love to get that recipe, but no way can you get the recipe from him.

I like it to be a little sweet, little salt, some heat but not make you sweat, and smoky of course. I can smoke or dehydrate so anything goes. Also no hamburger jerky, that stuff sucks.

I know I could find another forum for jerky, but I dont want Arkansas Jim's make you want to have relations with your cousin alligator jerky. I always feel the peeps on here are just like me, and I think me is cool, and therefore you all are cool too. One of you may have just what I am looking for

I will make you a deal, the winner gets my venison sausage recipe. It is also cool, and actually quite good.

One more thing...Is it obvious that I dont have a snowmobile this year? Darn economy, darn expensive sleds. Oh well, jerky will have to do for now...

I have tried alot of home brew recipies, the one I like the best is a store bought one, Hi Mountain Original you can usually find it at Sportsmans warehouse. I have also used Hi Country.
