when freshin up the grease in the bottom end... do you make sure there is enough in there and add more if needed... or should i scrap it all out and restart from start?

If it were me, I'd scrape as much of the old grease off that I could then put new grease in.

If it were me, I'd remove as much of the old as possible for these reasons:
-Grease does wear out.
-Helps to inspect the bearings.
-Too much grease is bad, so if the old is removed, you can add the correct amount of new grease (per service manual).
