How do the manufactures "take compression out"

Stock M1000 runs 12.1:1 compression ratio. Sounds like Twisted/ovs take compression out to the tune of 10.1-10.5? How is this accomplished? So they cut the dome out?
 
No case work is needed. Twisted alters the port timing of the cylinders, which requires you to send in your cylinders and head. The head is machined to compensate for the cylinder machining so you retain the stock C/R.
 
Really? 12:1 seams a little high to be able to run 87 octane. I dont have any idea what it is stock, I am just saying I think that is high.

I could be wrong, I believe that is what I have been told by Jeff at Dekota Performance, but I may be mistaken?
 
you could do that a few ways, some that come to mind, custom head, thicker gaskets, custom pistons
