gutting an 800 efi air box

can you gut an air box on an efi?

Yes. I gutted the 800 I had & my wifes 600 is gutted.

did you have any noticable difference in power or just to shave a little weight?

I did the same on mine, an 04 800. I saw slightly higher EGT temps so it was definitely getting more air but I don't really think you could feel it.
