Feeding 25 people

Great Guy Meal - sounds funny, but it tastes great

Dorito Casserole:

Ground meat (2lbs) with 2 pkgs of taco seasoning
Ranch style beans
1 can whole kernel corn
2 can of Fiesta cheese sauce (campbells soup)
Grated Monterey Jack and/or Pepper Jack cheese
1 Family size bag Doritos
1 can Rotel tomatoes
1 can ea. Cream of chicken and cream of mushroom soup (optional)

In a big pan brown the ground meat and add the taco seasoning. after that is done drain and put into a large bowl. add the Cream of chicken and the cream of mushroom (optional) The fiesta cheese, Ranch style Beans, Rotels and about 1/2 lb of crated cheese (Monterey/Pepper Jack mix)
Crush up half the bag of Doritos or the consistency you like. more if u like that texture. add all together and put into a greased casserole dish. top heavy with the Monterey/Pepper jack cheese. Back at 350 degrees until cheese on top is melted and semi brown. about 30 to 45 min but check it cause I'm not sure on the amount of time. Will make a lot so you will have to freeze some if you dont want to eat it the next day.

I love the ole walking tacos..:D get your mind outta the gutter;)

Anyway we always made them same way but they get the walking taco name because you just buy the lunch box size bags of corn chips and open the bag throw in the mix and hand them a plastic fork. no mess no fuss.

Let me see if I can make this easy. I don't really use a recipe because its so easy. This will feed 6-8 then just triple it, I've done it before and it works the same.

Mediterranean Chicken Pasta

3-4 Frozen or thawed chicken breasts( I use big frozen bags from Sams or Costco)
1 Package Scallions
1 bit of fresh garlic to taste
Basil
1 Package of Penne, or tube style pasta your preference.
2 Cans of diced, spiced tomatoes like Walmart or DelMonte
1 package of feta cheese
1 jar of green olives

1.Start by grilling the chicken use salt and pepper to taste, but leave it slightly undercooked (you'll finish it later) cut it into bite sized pieces doesn't really matter when if before or after you grill.

2. Chop scallions and saute in a stock pot(with butter or your favorite oil) the white end, with basil, and garlic. Keep the greens for later.

3. Pour cans of diced tomatoes in your sauteed onion, garlic, basil. Place almost finished chicken into the pot and simmer. This will finish the chicken and make it especially tender.

4. Boil your pasta.

5. Serve pasta, topped with your chicken sauce. Top that with feta, and the greens from the scallions, and green olives.

This easy concoction will make you and instant chef in the eyes of your friends. Enjoy.

Baked potatoes with chili and fixings on top is a pretty easy to do. Add a salad you are pretty much set to go. :)

Car Wreck (recipe is for 4 - 6 ish)

Cook 1 lb bacon, cook 1 lb hamburger, combine the 2 in a big electric skillet with (place ingredients here....ie: onions, green beans, corn, mushrooms, potatoes, etc) and to top it off add velveeta cheese. Looks like crap...tastes great...especially in the winter.

Just remember one thing: A little bit of velveeta goes a long ways and a lot of velveeta goes way too far.
