Stealth, ezhauler and neo all make 7.5x29 as a custom option. Rc trailer makes a 7x31 with either tandem 5200 or triple 3500 axles. that is the same trailers i am deciding on, i know 5 fit in a 7x31 but not sure how much room would be left in the 7.5x29
I am thinking I will end up with the 7x31 triple 3500. Undecided on brand yet but liked the looks of the neo and ezhauler better than the stealth
I've contemplated something like that for my 29'er. You would only need to lift the first and third sled front ends and it would give you a ton of room. I do agree with the OP that if he doesn't have a trailer yet, it's best to just buy a big enough one in the first placeYou may want to look into building a frame in the trailer that you can lift the back of a few of the sleds onto and pull the other ones underneath, similar to how they ship cars in containers.

Triples pull nice. I don't like 7 wide trailers. No room once you put in sleds. If you have access to two diesels, just give those guys a little more to pull and get an 8.5 car trailer v-nose. I have never talked to some one who wanted their trailer to be smaller, but not so much the other way around. Better yet would be gooseneck, but that's a whole other ball game.
