In Bismarck where I live, we have had huge hail storms about every two years that are major damage events like yours.
Every insurance company is going to be different. For the roof, mine for example will mark off 3 different squares randomly on the roof, and if any of them have more than 10 hail marks, it gets replaced. For the siding they just started circling with the chalk all the dents, and if they hit the certain amount in a square, it was added to the list. Vehicles were even easier, if there was a dent it was considered damaged, no questions asked. Depending on the company you are with they might total your neighbors roof, but a different company might not.
Some things to do: Check into the paintless dent repair shops. If you really got hammered over a wide area in town, they will come from all over the country and stay there in hotels for months. Look for the ones that are licensed, talk to them, and find the reputible ones, and look over a vehicle that has already been fixed. Save a ton of money on repairs and with pushing the dents out the correct way you will never be able to tell.
When they do come to check out your place, go on the roof with him and help him find the damage. Make him expalin his standard first then go with and make sure he is doing it right.
Get in line early with your adjuster to get a look at your stuff. If it takes too long, you might slowly be put in line at repair places, a lot of people are going to have claims to get fixed.
(Had to add on the hail storms, when the adjuster last came to our house he told us a story of a guy who claimed he had a hailed out car, he got there and it was all dented. Only problem was he said that his car was parked in the driveway, but the hail didn't reach that area, turns out he wanted a new car and put golf balls in a pair of socks and went to town.... adjuster said sorry and left hahaha.....
Find some of those stories for us, they do get good when this amount of money is invovled....
